Remember those fantastic Medjool Dates I fell in love with...? They have been a part of one of my go to mid morning snacks after I drink a glass of Chocolate Vegan Shakeology. {{Don't know what Shakeology is...stay tuned}}
This recipe is sooo quick and simple, I just have to share it with you. I haven't really experimented a whole lot with the dates. I mainly just pop one in my mouth when I need a little "pick me up" but you have to try this snack.

Ingredients:
1 Sprouted Grain Tortilla
1/2 Organic Banana
1 tsp Earth Balance Coconut Peanut Butter (or your choice flavor)
2 Dates
Drizzle of Agave (optional)

Directions:
Toast/heat the tortilla for approximately 1 min (I use my toaster oven)
Spread 1 tsp Earth Balance Coconut Peanut butter on half of the tortilla.

Spread 1 tsp Earth Balance Coconut Peanut butter on half of the tortilla.
Slice half of the banana and spread them out on the peanut butter.
Either cut or tear apart the dates (removing the pit) into pieces.
Spread them out on the peanut butter & banana combo.

Optional Step:
Drizzle with a little bit of agave. Dates are naturally sweet, but if you want to kick it up a notch, add the agave.

Finally,
Fold the tortilla in half and cut into three slices.
