Instead, here are a few simple and yummy things I whipped up in the kitchen last week.
The pictures were taken on my cell phone, so they are not the best quality.
What you need:
1 Cup Red Quinoa
1 Can Garbanzo Beans (drain & rinse)
1/2 Cup Mushrooms (any type)
1 Green Pepper
1/2 Large Onion
1 Garlic Clove
What you do:
Cook Quinoa according to package directions, make sure you rinse first. (I boiled mine in low sodium vegetable stock.)
Dice all veggies & rough chop garlic
Saute' in about a teaspoon of olive oil of choice
Mix everything together once veggies are soft and quinoa has absorbed all liquid.
ENJOY!
What you need:
Firm Tofu
Spicy Sesame Marinade (or marinade of choice, Teriyaki would be good)
1 Large Squash
1 Green Pepper
2 Lemons
Rosemary
Olive Oil
Optional: Side Salad with choice toppings
What you do:
Drain & Press Tofu then marinate 4+ hours or overnight
Cut Squash Length Wise & Slice Green Pepper and put into zip lock bag
Zest both lemons into bag then juice
Add a few sprigs of rosemary
Add approx 1 tbsp of Olive Oil to bag
After a few hours everything is ready to go onto the grill.
Veggies take longer to soften (about 20 min) and Tofu is around 10 min.
ENJOY!
What you need:
Vegan Pancake Mix
Blueberries
Water
Syrup of choice (I used Coconut)
What you do:
Follow directions on pancake box as far as serving size and water requirements
Put everything into the rice cooker
Add Blueberries or your choice of fruit
Turn on rice cooker for approx 20-25 minutes
"Dump" finished pancake onto a plate and cut like a pie
I HIGHLY recommend coconut syrup. That stuff is amazing!
ENJOY!
